Broccoli, Grape, and Pasta Salad

Broccoli, Grape, and Pasta Salad Recipe

I found this amazing recipe on Pinterest a few weeks ago and have made it three times since.  Every time that I make it it is a hit!  Both times I did not add the pecans simply because I do not care for them.  This is now a family favorite!

Ingredients

1 cup chopped pecans
  • 1/2 (16-oz.) package farfalle (bow-tie) pasta
  • 1 pound fresh broccoli
  • 1 cup mayonnaise
  • 1/3 cup sugar
  • 1/3 cup diced red onion
  • 1/3 cup red wine vinegar
  • 1 teaspoon salt
  • 2 cups seedless red grapes, halved
  • 8 cooked bacon slices, crumbled

Preparation

  1. 1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
  2. 2. Prepare pasta according to package directions.
  3. 3. Meanwhile, cut broccoli florets from stems, and separate florets into small pieces using tip of a paring knife. Peel away tough outer layer of stems, and finely chop stems.
  4. 4. Whisk together mayonnaise and next 4 ingredients in a large bowl; add broccoli, hot cooked pasta, and grapes, and stir to coat. Cover and chill 3 hours. Stir bacon and pecans into salad just before serving.

Thirsty Thursday

For anyone who knows me knows that I love iced coffee.  I perfer blended but also love over ice.  I was so happy with McDonald's came out with their mocha Frappe and have been loving it ever since.  This past week I got a coupon (my other love) for a free Frappe from Burger King.  I figured it was free I will give it a shot.  All I have to say is good thing it was free! It was HORRIBLE!  I took one sip and it tasted like spoiled milk!  I put it in the cupholder and started my drive into work.  I then thought, I did just brush my teeth maybe that is why is tasted so bad.  I took another sip and it was still bad.  When I got into the town I work in I went through the drive-thru of a Burger King and just ask how they make it.  She told me that they make it with a syrup and that there is no coffee in it.  I told her that I had gotten one (not from them) and it tasted horrible.  she told me that the syrup has to stay refrigirated.  She offered to make me another one to try from them.  I told her she did not have to but she insisted.  I will admit that the one she made me was better and I was able to drink about half of it but it was nothing like McDonald's.  I am not posting this to tell you not to go to Burger King I am giving my opinion.  I am neither a Burger King or a McDonald's girl but when it comes to my Frappes I will be a McDonald's girl.

VS.

and the winner is..... McDonald's!

Thoughtful Thursday

For the past few weeks one of my Aunts have been going through a lot.  She does daycare and had her daughter working with her.  Recently she was getting complaint on how her daughter was treating the kids.  My aunt gave her a few days off and, to make a long story short, she ended up letting her daughter go.  There was a big argument and my cousins husband threaten to kill my aunt.  They took the threat seriously and notified the police to document it and they (the police) spent the next day watching the husband and protecting my aunt.  The sadest part of the whole situation is that my cousin has a little girl (7 years old) and she is not letting her see or even talk to my aunt.  My aunt has seen her almost everyday of her life until now.  My Aunt is so hurt by the whole situation and is having a hard time.  I just wanted to ask for prayer request for my aunt to give her peace of mind and reasurance that she is doing the right thing in the choices that she is making.  There is a lot more to this story but this is just not the place for it.  I am just looking for a guick thought and pray for my Aunt and family.

Thank You!
