Busy Times

Things have just been REALLY busy for me.  I have been working overtime, we went camping, I started to coach Volleyball, I am planning Mallorie 1st birthday (crazy that she is almost one already), and we will be going camping again in a few weeks.  I have not had any time to craft, take special pictures, or even make up a menu.  I am hoping that things slow down soon and I can get back to normal. 

As far as coaching... I started to coach the Jr. High. team at a local Christian school.  It is a pretty small school so my team is made up of four 7th graders and eight 6th graders.  A lot of them have never really play before so I am starting from square one.  I am really surprised at how well they are doing and catching on.  the biggest ocbstical that They have is the height of the net.  It is hard to teach the correct way to block and hit when they can not even reach the net.  I know that it will come with time but for now it is tough.  I am inpressed with their passing and setting and even some of their serving skills.  They are all sweet compassionate girls and I am looking forward to this season. 

Vacation

A few weeks ago we rented a cabin up in Ludington.  The resort is called Sunset Bluff Resort.  My Husband has been going there with his family since he was a kid.  All of his Aunts and his grandparents would stay in the biggest cottage.  There are a lot of great memories here for him and I love it there too.  When we called last Fall to ask about renting a cabin they told us that they had two left a 4 bedroom cabin or the A-frame #3 that we stayed in. 

The A-frame had one bedroom and a loft which also had a bed.  It sits up on a hill that over looks Hamlin Lake and has almost 180 degree view of the lake.  The sunset everynight were amazing. 

We asked friends of ours and their 2 1/2 year old son to go with us. They were excited. 

We got up there on Saturday and left the following Saturday.  It only rained one day while we were there and even then it was just a sprinkle on and off all day.  That day we went downtown and shopped at the little stores down there.  We did so much while we where there.  We played on the playground and swam in the pool.

We went for a boat ride and went fishing!

played with glowsticks in the dark (the kids favorite thing to do...well worth the $1 spent on them!)

We relaxed

we spent quality time together

and made great memories

I do not plan anything for the weekend because I have learned that we do not stick to is anyway and that way I do not ahve to buy special food for it that we will not use.

New Recipe

Salsa Chicken Wrap with Pineapple Pico de Gallo

What You Need

2 cups finely chopped fresh pineapple

1/4 cup  finely chopped red onions

2 Tbsp. chopped cilantro

1 Tbsp.  finely chopped jalapeño peppers

1 Tbsp. lime juice

2 cups  shredded cooked chicken

1/4 cup KRAFT Zesty Italian Dressing

1/2 cup  (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread

2 Tbsp. TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa

4   flour tortillas (10 inch)

4 leaf lettuce leaves

1 large  tomato, cut into 8 thin slices, halved

Make It

COMBINE first 5 ingredients.
TOSS chicken with dressing. Mix cream cheese spread and salsa until well blended; spread onto tortillas. Top with lettuce, tomatoes, chicken mixture and half the pineapple mixture; roll up, tucking in both sides of each tortilla as it is rolled. Secure with toothpicks; cut in half.
SERVE with remaining pineapple mixture.
